Traditional cooking a key to success

SULAIMANI, Kurdistan Region—Traditional Kurdish food cooked over a wood fire in a Sulaimani restaurant reminds Kurds of their time-honoured way of living.
 
Nawzad Mama Mala, the owner of the restaurant, believes that what attracts people to his restaurant is the way the food is being cooked. “People love foods that have been cooked over a wood fire. They have a special taste,” Mama Mala told Rudaw. “There are many other restaurants that cook their food on gas.”
 
“People from all over visit here. People from Kirkuk and Erbil say that they came to Sulaimani because of my restaurant and they love the food,” he added. “It is traditional and has a special taste.”
 
Visitors are happy to see the mud ovens. “This is my first time here,” a customer at the restaurant told Rudaw. “People said that this restaurant cooks traditional Kurdish food.”
