SULAIMANI, Kurdistan Region – Falah Qadir and his wife Shukrya Salhi have been in business for three years in Sulaimani. They make
nawsaj – a traditional fried pancake.
Nawsaj is a simple recipe of flour, yeast, and water – deep-fried. It is typically eaten with sheep’s yoghurt.
Qadir and Salhi also sell
naan (bread) and
doogh, a sour drink made of yoghurt. While there is always a high demand for these products, nawsaj is especially popular during Ramadan.
The demand keeps them busy from Iftar to Parshew – the dusk and dawn meals of Ramadan.
